All Garlic Gold® brand products currently do not have to be refrigerated after opening. However, you'll want to keep them in a cool, dark place. Preferably with all of your other spices and or oils. You don't want to expose them to direct sunlight either.
You are correct, the products made are sometimes lighter or darker in color. Garlic Gold® is a USDA organic product and thus variations in color are normal. The USDA Organic garlic and olive oil color may have variation due to weather and harvest seasons.
